olive oil and some salt and pepper and roast for 45 minutes. \u00a0Set aside to cool.<\/li>\n<li>After the beets have cooled, take a small paring knife and peel off the skins. \u00a0Quarter the beets and place in a food processor. \u00a0Add the eggs and flours. \u00a0Pulse until a ball of dough forms. \u00a0Add a little more flour, a tablespoon at a time, until a dough forms that is not dry, but it a little. You don&#8217;t want the pasta too dry but you don&#8217;t wait it to stick to the rollers. \u00a0Adjust the rollers to the second setting and run the pasta through. \u00a0Keep running the pasta
