Sweet potato waffles, guacamole and fried egg

For 2 people Preparation time: 10min, cooking time: 30 min


  • 200 g of sweet potato
  • 30 ml of grape seed oil
  • 6 tbsp of milk
  • 125 g of flour
  • 1 sachet of baking powder
  • 2 eggs
  • 60 g of grated cheese
  • avocado
  • 1/2 sweet chilli pepper
  • 1/2 lemon
  • 1 tbsp oil
  • 4 eggs
  • fresh chives minced
  • salt pepper


  1. Preheat the oven to 200 ┬░ C.
  2. Stitch the sweet potato with a fork. * Pack in foil and bake for about 20 minutes (or more depending on the size of the sweet potato).
  3. As soon as the flesh is tender, take it out of the oven and recover the flesh of the sweet potato and crush it. Reserve.
  4. Take out the avocado flesh and crush it, add the sweet pepper, the juice of 1/2 lemon and salt and pepper. Reserve .
  5. Mix the flour and baking powder
  6. Add egg yolks and mix.
  7. Add oil and milk by mixing well.
  8. Add mashed sweet potato and grated cheese and mix.
  9. Whisk in egg whites and incorporate into batter.
  10. Bake waffles with a waffle iron.
  11. In parallel, heat the oil in a pan and cook the eggs.
  12. In each plate, place 3 small waffles, a tablespoon of avocado, a fried egg and a lemon wedge.
  13. Sprinkle with fresh chives, pepper, and enjoy immediately !
  14. You can accompany it all with a mixed salad
