Sweet potato and red lentil curry

of coconut milk

Tsp red thai curry paste

chopped onion

tbsp of grated ginger

tbsp masala

salt and pepper

tbsp of tomato paste

Place all the ingredients except the coconut in a large saucepan.

Cover and bring to a boil.

Lower the fire and cook covered for about 20 min.

Stop cooking and add the coconut milk.

Stir and cover for 5 minutes.

Serve with brown rice and topped with strips of red onion and parsley.
