Red lentils balls
For about twenty balls Preparation time: 10 min, Cooking time: 10 min

of red lentils

of breadcrumbs

small red onion

of turmeric

pepper
Olive oil for cooking

pinch of ginger
Instructions
Cook the red lentils in boiling and salted water for about 15 minutes.
Drain the lentils and let cool.
Meanwhile finely chop parsley and red onion.
Pour the mixture into a bowl and mix with the bread crumbs.
Add the red lentils, salt and pepper.
Sprinkle with turmeric and ginger.
Add an egg and mix.
If the mixture is too dry and does not stick, then add a second egg.
If on the contrary the balls do not hold (mixture too wet) add 1 tbsp of flour.
Place the dough in the fridge for a few moments.
Shape the balls and cook them in non-adhesive pan with a little olive oil until golden brown.
Serve with a yogurt and herbs sauce.
