When hot, pour a small ladle of pancake batter.

Cook until small bubbles appear on the surface of the pancake. Slide a spatula under the pancake, turn it over and cook for 1 to 2 minutes.

Serve pancakes with fried eggs, grilled bacon, pan-fried mushrooms and guacamole-crushed avocado.
