Raw beetroot and apples salad

For 2 people Preparation time: 20 min


  • 1 large pealed raw beetroot
  • 1 apple without seeds
  • A handful of nuts
  • 2 tbsp of ricotta
  • 1 handful of cooked beans
  • 2 eggs
  • A few bunch of chives
  • 1 tbsp of oil
  • 1 tsp white balsamic vinegar
  • Salt and pepper


  1. Bring a pot of water to a boil.
  2. Gently lay the eggs in the boiling water and cook for 7 minutes for hard-boiled eggs.
  3. Grate the apple then the beetroot.
  4. Place the grated beet in a bowl and mix with the oil and vinegar. Add salt and pepper.
  5. Place the beet on the plate and add the grated apples.
  6. Add crushed walnuts, beans, ricotta and eggs cut in 2.
  7. Add salt and pepper and a little chives on the whole.
