	Pea, parsley, pistachio and pomegranate salad

															handful of pomegranate

															handful of pistachio

															handle of purslane
									
-

															bunch of parsley

															tbsp olive oil
									
-

															tbsp balsamic vinegar
									
-

															tbsp mango juice
									
- 
															Salt and pepper
									
 
	 	 
				
		
				
						
								- 
										Dip the frozen peas in hot water for a few moments then drain them. 
- 
										Chop half of the pistachios. 
- 
										Chop the parsley. 
- 
										Prepare the vinaigrette in a small salad bowl by mixing olive oil, vinegar and mango juice.  Add salt and pepper. 
- 
										Add to the salad bowl, the drained peas, the grains of pomegranate, pistachios, purslane and parsley. 
- 
										Mix the whole and the salad is ready.
