Pea, parsley, pistachio and pomegranate salad

Ingredients

  • 100g frozen peas
  • 1 handful of pomegranate
  • 1 handful of pistachio
  • 1 handful of purslane
  • 1 bunch of parsley
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp mango juice
  • Salt and pepper

PREPARATION

  • Dip the frozen peas in hot water for a few moments then drain them.
  • Chop half of the pistachios.
  • Chop the parsley.
  • Prepare the vinaigrette in a small salad bowl by mixing olive oil, vinegar and mango juice. Add salt and pepper.
  • Add to the salad bowl, the drained peas, the grains of pomegranate, pistachios, purslane and parsley.
  • Mix the whole and the salad is ready.
