Assiette printanière végétarienne

- Une dizaine d’asperges vertes
- Une dizaine de carottes
- Une dizaine de petits champignons de Paris
- 250g de petits pois
- 5 belles pommes de terre
- Spray d’huile d’olive
- 100 ml de crème fraîche
- Miel
- Sel et poivre

PREPARATION
- Peler les pommes de terre, les carottes et les champignons.
- Plonger les pommes de terre dans l’eau bouillante salée pendant 5 minutes.
- Ôter les pieds des asperges et retirer à l’économe leurs première peau si celle ci est dure.
- Faire blanchir les asperges et les carottes, 5 minutes également dans de l’eau salée bouillante.
- Égoutter les pommes de terre et les couper en petits cubes.
- Placer les cubes de pommes de terre sur une plaque recouverte de papier cuisson et pulvériser d’huile d’olive. Saler légèrement.
- Enfourner les pommes de terre pendant 20 à 30 minutes à 200° C jusqu’à ce qu’elles soient bien dorées. À l’aide d’une spatule, retourner les pommes de terre pendant la cuisson.
- Plonger les petits pois dans une casserole d’eau bouillante salée pendant 10 minutes.
- Chauffer la crème et égoutter les petits pois.
- A l’aide d’un mixeur, mixer les petits pois et ajouter la crème chaude. Mixer à nouveau et conserver au chaud.
- Dans une poêle chaude, poêler les champignons quelques minutes à sec puis ajouter un peu d’huile d’olive et laisser cuire tout en mélangeant quelques minutes.
- Ajouter les carottes et les asperges et poêler l’ensemble quelques instants en ajoutant un peu d’huile d’olive.
- Déposer ensuite une grosse cuillère à soupe de miel et 100ml d’eau. Porter à ébullition tout en mélangeant et poêler les légumes ainsi jusqu’à ce que le liquide soit complètement absorbé et que les légumes soient glacés dans le miel.
- Saler et poivrer.
- Servir dans une assiette la crème de petits pois et les légumes glacés au miel accompagnés des pommes de terre dorées au four.

- A dozen of carrots
- A dozen of small white mushrooms
- 250g peas
- 5 large potatoes
- Olive oil in spray
- 100 ml cream
- Honey
- Salt and pepper

- Cook the potatoes in salted boiling water for 5 minutes.
- Remove the bottom of asparagus and remove their first skin if it is hard.
- Blanch asparagus and carrots, 5 minutes in salted boiling water.
- Drain the potatoes and cut into small cubes.
- Place the cubes of potatoes on a baking sheet covered with baking paper and spray with olive oil.
- Add salt lightly and place the potatoes in the oven for 20 to 30 minutes at 200° C until they are golden brown.

- Add salt and pepper.
- Serve on a plate, the cream of peas and the glazed vegetables with the baked potatoes.
