Pizza à la croûte moelleuse

Pour 1 pizza
Temps de préparation:20 min, temps de repos: 1h45

  • 225 g de farine de blé T55
  • 125 ml d’eau tiède (pas chaude)
  • 30 ml d’huile d’olive vierge extra
  • 1 cuillère à café de sel
  • 2/3 d’un sachet de levure de boulanger déshydratée (environ 7 g)
  • 1 cuillère à soupe d’origan séché

PREPARATION

  • Mettre tous les ingrédients dans le bol du robot ou dans la machine à pain et pétrissez jusqu’à obtenir une pâte souple et élastique.
  • Une fois le pâton formé, mettre la pâte dans un saladier et couvrir d’un chiffon et laisser lever environ 1h30 à température ambiante. Le pâton doit doubler de volume.
  • Au bout de ce laps de temps, renverser le pâton sur le plan de travail légèrement fariné.
  • Expulser l’air du pâton et aplatir la pâte, soit à la main, soit à l’aide d’un rouleau à pâtisserie et laisser les bords un peu plus épais.
  • Déposer cette pâte délicatement sur une plaque allant au four.
  • Laisser lever 15 minutes, toujours dans un endroit tempéré puis garnir la pizza:

Par exemple mettre 3 cuillères à soupe de sauce tomate au centre de la pâte et étaler jusqu’à environ 1 cm des petits boudins qui forment le rebord de la pâte. Arroser d’une cuillère à soupe d’huile d’olive. Répartir ensuite 75 g de mozzarella sur la tomate, ajouter des tranches de champignons et saupoudrer de quelques feuilles de basilic ciselées. Enfourner pour 8/9 min de cuisson dans un four préchauffé à 300°C, chaleur tournante.
