I love sushi, maki and other Japanese preparations made of vinegared rice. So when I received my bentos from my Bento&co partner, I wanted to prepare a Japanese meal. I revisited the chirashi Salmon and Avocado Burger way and I realised traditional salmon sushi and maki.

Did you know that the Japanese now hold the world record for longevity with 78 years of life expectancy for men and 85 years for women? Food is clearly linked to health, and there is no doubt that the food eaten by the Japanese during the past years become a determining factor in the upward trend in life expectancy. Traditional Japanese cuisine consists of rice which contains oligosaccharides, beneficial to the intestines, as well as the amino acid gamma butyric, credited with a stabilizing role in blood pressure. Add to this, sashimi (raw fish or shellfish more nutritious than cooked fish) rich in Omega 3 slightly dipped in soy sauce rich in probiotics and vitamin B3 to increase the good cholesterol. Tofu and wakame are also the favorite combination for their high protein and calcium.

Longevity is at the bottom of the bowl!

Chirashi burger way, sushis and makis

For 2 chirashi burger way, 6 sushis, 12 makis

Preparation time: 1h, Refrigeration time: 1h

Ingredients

  • 300g sushi rice
  • 50 ml rice vinegar
  • 30g granulated sugar
  • 6g salt
  • 200g fresh salmon
  • 1/2 avocado
  • 1 grated carrot
  • 1/4 de cucumber
  • some poppy seeds
  • some sesame seeds
  • chives
  • 2 sheets of wakame seaweed

PREPARATION

  • Cook the Sushi rice according to the instructions written on the packet.
  • Dispose the rice in a rectangular baking dish to allow the rice to cool in a thin layer.
  • In a bowl, mix the rice vinegar with sugar and salt. Warm it up in the microwaves if sugar and salt are not perfectly diluted.
  • Pour this mixture on the rice and stir well.
  • Dice 2/3 of the salmon and slice the 1/3 remaining.
  • Dice the half of the half avocado and the slice remaining half.
  • Cut the cucumber in thin slices.
  • Prepare the chirashi : in a pastry circle place a layer of rice, a layer of salmon, a layer of grated carrot then a layer of diced avocados and finish with a layer of rice.Tamp down with the pusher at each stage before adding the next layer. Sprinkle with sesame and poppy seeds . Add chopped chives . Refrigerate .

  • Prepare the sushis: place the rice in a sushis mould and make your sushis. Add a slice of salmon on the top. Refrigerate.

  • Prepare the makis: on a bamboo mat , place a sheet of seaweed and then a layer of rice (leave 1 cm without rice on the contours of the seaweed) . Place the filling in the middle (vegetarian maki : grated carrot, avocado, cucumber; salmon maki : salmon, avocado and chives). Lift the bamboo mat and roll the maki . Press lightly on the whole surface of the roll and squeeze the ends well . Cut into 6 pieces with a wet knife. Refrigerate .

  • Place all your Japanese bites in your favourite bento.
  • Refrigerate for 1 to 2 hours before serving.

You can eat your Japanese preparations with wasabi, soja sauce, ginger.
