Pain cocotte

Ce pain est comme son nom l’indique un pain réalisé dans une cocotte. La mie est très souple et le rendu est parfait, comme chez le boulanger. Il nécessite très peu de pétrissage et on obtient un pain avec une jolie croute bien dorée. Je vous conseille de finir la cuisson (5 dernières minutes) sur une grille afin de rendre la croûte croustillante.

- 500g de farine blanche biologique ou pour varier un mélange 300g farine blanche et 200g de farine complète
- 350ml d’eau tiède
- 1,5 càc de gros sel
- 1 càc de sucre
- 20g de levure fraiche de boulanger

PREPARATION
- Delayer la levure de boulanger dans 50ml d’eau tiède (prélevée des 350ml). Laisser reposer 10 à 15 minutes jusqu’à l’apparition de bulles.
- Dans un récipient mélanger la farine, le sel et le sucre. Faire un puit au centre et verser la levure et le restant d’eau.
- Mélanger très rapidement à l’aide d’une cuillère en bois. La pâte doit paraitre collante et grumeleuse.
- Saupoudrer de farine et recouvrir le récipient d’un chiffon et laisser pousser pendant 1h30.
- Au bout de ce temps de pousse, fariner un plan de travail et pétrir rapidement le pain sans trop dégazer la pâte. Bouler la pâte.
- Disposer le pâton dans une cocotte chemisée de papier sulfurisé.
- Laisser pousser 35 minutes à couvert avant d’enfourner à four froid pour une durée de 1h à 250°. A la sortie du four laisser refroidir sur une grille.
On peut ajouter à la pâte des graines variées: tournesol, graines de courge, graines de lin, de pavot… lors du 1er mélange de la pâte avant la première pousse.
Un joli pain comme chez le boulanger!

Cocotte bread is a bread baked in a cocotte (casserole dish). The white is very soft, the crust is lovely golden brown, a bread just perfect such as the one coming from the baker!

- 500g organic plain flour or a mix of 300g plain flour and 200g whole flour
- 350ml warm water
- 1,5 tsp coarse salt
- 1 tsp sugar
- 20g fresh yeast

PREPARATION
- Mix baker’s yeast in 50 ml of warm water (from the 350ml) . Let stand 10 to 15 minutes until bubbles appear .
- In a bowl mix the flour, salt and sugar. Make a well in center and pour the yeast and the remaining water .
- Mix quickly with a wooden spoon. The dough should be sticking and lumpy.
- Sprinkle with flour and cover with a cloth and let it grow for 1h30 .
- After this time, flour a work surface and knead the bread quickly. Round the dough.
- Place the dough in a cocotte (casserole dish) covered with parchment paper.
- Let grow 35 minutes more with the cover before to put into a cold oven for 1h at 250°. When cooked, let cool the bread on a grill.
- You can take out the bread from the cocotte 5 minutes before the end and continue to bake it for the last 5 minutes on a grill. The bread will be crusty.
You can add some seeds: sunflower, pumpkin seeds, poppy seeds, linseeds… during the first mix.
