Risotto au potimarron

Pour réussir un risotto, il faut être patient. Il ne faut pas quitter la casserole et remuer sans cesse le riz pour qu’il cuise régulièrement sans accrocher au fond. On ajoute le bouillon bien chaud au fur et à mesure à l’aide d’une louche juste avant que le riz ne soit plus dans le bain de son précédent bouillon. On poursuit ainsi la cuisson jusqu’à ce que le riz soit tendre et on termine avec une dernière petite louche de bouillon et du parmesan pour apporter une texture moelleuse au risotto.
Risotto au potimarron
Pour 4 personnes
Temps de préparation: 15min, temps de cuisson: 20 à 30 min

- 250g de potimarron
- 1 Kubor
- 1L d’eau
- 1 oignon
- 2 càs d’huile d’olive
- 1 dosette de safran
- 250g de riz arborio
- 10cl de vin blanc
- 20g de beurre
- 60g de parmesan rapé
- sel et poivre

PREPARATION
- Porter à ébullition 1L d’eau avec le bouillon et maintenir l’eau chaude.
- Après avoir épluché l’oignon et le potimarron, émincer l’oignon et couper le potimarron en dés.
- Dans une sauteuse, faire revenir l’oignon avec une càs d’huile d’olive et le safran jusqu’à ce l’oignon devienne transparent (3 min).
- A feu vif, ajouter le riz et une càs d’huile d’olive. Faire sauter le riz dans l’huile 2 minutes puis ajouter le vin blanc.
- Laisser le vin blanc s’évaporer et ajouter du bouillon chaud jusqu’à couvrir le riz et ajouter le potimarron.
- Baisser le feu et faire cuire le riz et le potimarron, sans cesser de remuer, 20 à 30 minutes, en veillant à couvrir, au fur et à mesure de bouillon frémissant.
- Lorsque le mélange devient crémeux et que les grains de riz et le potimarron sont cuits, ajouter hors du feu une dernière petite louche de bouillon, le beurre et le parmesan.
- Saler et poivrer et mélanger l’ensemble.
- Servir aussitôt.

Add the hot broth using a ladle just before the rice is no longer in the bath of his previous broth. Continue to cook until the rice is tender and ends with a last small ladle of broth and Parmesan to give a soft texture to the risotto .
Pumpkin risotto
For 4 servings
Preparation time: 15min, cooking time: 20 à 30 min

- 250g pumpkin
- 1 stock cube
- 1L water
- 1 onion
- 2 tbsp olive oil
- 1 pinch of saffron
- 250g rice for risotto
- 10cl white wine
- 20g butter
- 60g grated parmesan
- salt and pepper

PREPARATION
- Bring to boil 1L of water with the stock and maintain the water warm.
- Peel the onion and the pumpkin, mince the onion and dice the pumpkin.
- In high-sided frying pan, cook the onion until brown with 1tbsp of olive oil and saffron (3 min).
- At high heat , add the rice and a tablespoon of olive oil . Cook the rice in oil for 2 minutes then add the white wine.
- Wait until the white wine is totally evaporate and add the hot broth and cover the rice. Add the pumpkin .
- Reduce heat and cook the rice and pumpkin , stirring constantly , 20 to 30 minutes , making sure to cover with hot broth gradually.
- When the mixture becomes creamy and the rice and pumpkin are cooked, remove from heat add one more small ladle of broth , butter and parmesan.
- Add salt and pepper and stir well.
- Serve without waiting.
