Tiramisu aux d’abricots et éclats de pistache

Voici un tiramisu revisité. Ici pas de biscuit, le croquant est apporté par les éclats de pistache. Un mélange sucré et acide à la fois, un dessert frais pour l’été!
Tiramisu aux abricots et éclats de pistache
Pour 6 verrines
Temps de préparation: 30 min, Cuisson: 20min, Dressage: 5min, Temps de repos: 2h
Ingrédients
Compotée d’abricots

- 10 gros abricots
- 2 càs de sucre
- un peu d’eau

Mousse mascarpone

- 2 oeufs
- 250g de mascarpone
- 60g de sucre
- 15 pistaches sans coques et non salées

Préparation
Compotée d’abricots
- Dénoyauter et couper en 4 les abricots.
- Mettre les abricots dans une casserole avec les 2 càs de sucre et un fond d’eau.
- Porter à ébullition puis baisser le feu. Laisser cuire à feu doux pendant 20 minutes tout en remuant régulièrement. Les abricots doivent avoir fondus.
- Mixer la préparation jusqu’à obtenir un mélange lisse et homogène. Laisser refroidir
Mousse mascarpone
- Séparer les blancs des jaunes.
- Dans un bol, battre les jaunes d’oeuf avec 30g de sucre jusqu’à ce que le mélange blanchisse. Ajouter la crème mascarpone et fouetter jusqu’à obtenir une crème homogène.
- Dans un autre récipient, fouetter les blancs en neige avec 30g de sucre.
- Verser la crème mascarpone sur les blancs montés en neige et incorporer délicatement à la maryse sans casser les blancs.
Montage en verrines
- Hacher les pistaches grossièrement.
- Dans chaque verrine, verser un fond de compotée d’abricots.
- Verser à la cuillère ou à l’aide d’une poche à douille la crème mascarpone jusqu’à 2 cm avant le haut de la verrine.
- Finir avec une cuillère à soupe de compotée d’abricots et 3 pincées d’éclats de pistache.
- Placer au réfrigérateur au moins 2 heures avant dégustation.

Here is a revisited tiramisu. There is no biscuit, the broken pistachios bring the crunchy. A sweet and sour blend, a fresh dessert for summer!
Apricot Tiramisu with broken pistachios
6 verrines
Preparation time: 30 min, Cooking time: 20min, Presentation time: 5min, Refrigeration time: 2h
Ingredients
Apricot compote

- 10 large apricots
- 2 tbsp sugar
- water

Mascarpone mousse

- 2 eggs
- 250g mascarpone
- 60g sugar
- 5 pistachios without the shells and non-salted

Preparation
Apricot compote
- Pit and cut the apricots into 4
- Place the apricots in a saucepan with the sugar and a bit of water (1 cm)
- Bring to boil, then lower the heat. Cook over low heat for 20 minutes and stir regularly. The apricots must have melted.
- Mix the preparation until smooth and blended. Let cool.
Mascarpone mousse
- Separate the whites from the yolks.
- In a bowl, wisk the yolk with 30g sugar until white mixture. Add the mascarpone and whisk until a smooth cream.
- In another bowl, wisk the egg whites with 30 sugar.
- Pour the mascarpone over the beaten eggs and gently blend with a spatula without breaking the whites.
Presentation

Chop the pistachios coarsely.

In each verrine, pour a bit of apricots compote (1 cm).

Pour the mascarpone mousse with a tablespoon or with a piping bag until 2cm before the top of the glass.

Finish with a tablespoon of apricots compote and 3 pinches of broken pistachios.
- Refrigerate at least 2 hours before serving.
