Les muffins sont des petits gateaux originaires du Pays de Galles. Ils sont très répandus dans les pays anglo-saxons, principalement aux Etats Unis. Le principe pour des muffins réussis, est de préparer le mélange des ingrédients des produits secs d’un côté et le mélange des produits liquides de l’autre. On mélange ensuite les 2 préparations rapidement et grossièrement à l’aide d’une spatule en bois sans avoir peur de laisser des grumeaux. Les muffins sont traditionnellement sucrés mais j’ai décidé aujourd’hui de vous en faire une version salée que vous pourrez décliner avec les ingrédients de votre choix tout en gardant les ingrédients de base mentionnés par une *.

Ces muffins salés ne doivent pas être confondus avec les English muffins, qui sont des sortes de petits pains ronds que l’on coupe en deux pour tartiner de beurre et de confiture ou qui sont employés comme base de la préparation des « oeufs Bénédicte ». Promis je vous prévois la recette des muffins anglais dans un prochain post!

Ma recette me vient d’Australie, les doses sont en cup. J’ai l’habitude de faire cette recette avec mes cups, je préfère donc la conserver ainsi mais sachez que 1cup = 240ml, 1cup de farine = 130 g, 1cup de sucre = 240g … Vous comprendrez que les conversions ne sont pas toujours évidentes!

Pour 20 petits muffins

Temps de préparation: 5 min, temps de cuisson: 20 min

  • 2,5 cups de farine blanche*
  • 2 càc de levure*
  • 1 càc de sel*
  • 2 cups de pousses d’épinards frais hachés
  • 1 cup de mozzarella
  • 1 cup de tomates cerises coupées en 4
  • 2 càs d’emmenthal
  • 1/4 cup de graines de courge
  • 1+1/3 cups de lait*
  • 90g de beurre*
  • 1 oeuf*

PREPARATION

  • Préchauffer le four à 200°C.
  • Dans une récipient, mélanger farine, sel, levure, épinards hachés, tomates cerises coupées en 4, mozzarella coupée en dés, graines de courge et emmenthal.

  • Dans un bol faire fondre le beurre. Ajouter un oeuf battu et le lait. Mélanger.

  • Mélanger rapidement et grossièrement la préparation liquide avec la préparation solide à l’aide d’une spatule en bois.

  • Huiler un moule à muffins et remplir au 3/4 chaque alvéole de la préparation à l’aide d’une cuillère à glace.

  • Enfourner et cuire pendant environ 20 minutes, jusqu’à ce que les muffins sont joliment dorés.

The muffins are small cakes coming from Wales. They are widespread in Anglo-Saxon countries, mainly in the United States. The principle for a successful muffins, is to prepare the mixture of ingredients of dry products on the one hand and the mixing of liquid products on the other. Then mixed the two preparations quickly and coarsely using a wooden spatula without fear of leaving lumps. The muffins are traditionally sweet but I decided today to make you a salty version you can decline with the ingredients of your choice while keeping the basic ingredients mentioned by *.

These savory muffins are not to be confused with the English muffins, which are kind of round bread that are cut in half to spread with butter and jam. They are also used as a basis for preparing the « Eggs Benedict ». I  promise you the English muffins recipe in a future post!

  • 2.5 cups of  plain flour *
  • 2 tsp of baking powder *
  • 1 tsp of salt *
  • 2 cups of packed, spinach leaves 
  • 1 cup of mozzarella
  • 1 cup of cherry tomatoes cut in 4
  • 2 tbsp emmenthal
  • 1 + 1/3 cups of milk *
  • 90 g of butter* 
  • 1 egg *

PREPARATION

  • Pre-heat oven to 200C.
  • Wash, drain, and finely chop the spinach leaves. In a bowl, mix spinach leaves, flour, baking powder, salt, tomatoes, mozzarella, emmenthal, pumpkin seeds. Mix well until all ingredients are well combined.

  • Melt the butter and add the egg and milk. Whisk to combine.

  • Add this to the previous mixture and stir quickly to combine with a wooden spatula.

  • Line a muffin tray with liners and spray or grease with butter or oil. Pour into the lined muffin tray until the holes are 3/4 filled.

  • Bake for 20 minutes or until the muffins are golden brown. Use a skewer to poke the muffin all the way through and make sure there’s no unbaked dough remaining. Remove from tray and cool on wiring racks.

You can eat the muffins warm or cold during the aperitif.
